How the Once-Over Runs

On aquifer water the story is mostly neglect — a filter that has not been changed since the kitchen was redone — and a freezer in a ninety-degree garage running too warm for any harvest to finish. On the well-fed edges of Clements Ferry the scale arrives early and the filter chokes long before its printed date.

Under-counter and standalone machines are everywhere here — Old Village and Daniel Island entertaining kitchens, Isle of Palms and Sullivan’s rental houses, the docks along the Wando and Shem Creek — and they get their own once-over: condenser first, then circulation pump, evaporator plate and bin sensor. Salt air chews through a dock machine’s condenser in a couple of seasons, and a proper cleaning is often the whole job.

Our ice has had a taste since spring.
